Joyce was born on November 12, 1934, the youngest child of Herbert and Catherine (nee Walters) Knoebel. She grew up on a dairy farm and graduated as Salutatorian of Menomonee Falls High School. She worked as a teller at Farmers and Merchants Bank but spent most of her years as a homemaker and volunteer. Joyce met Gil while on vacation in Door County and they loved spending summers at their cabin in Baileys Harbor with family and friends. Joyce enjoyed boating, traveling, cheering on the Packers and Badgers and treasured time spent with her children and grandchildren. She gracefully battled cancer for 25 years and her strength, humility, and deep Catholic faith was an example for all.
