He was predeceased by: his parents, Victor F. Sánchez and Jesusita "Susie" Sánchez. He is survived by: his wife Ruth A. Sánchez; his children, Victoria Sánchez Martinez, Jason Sánchez (Alyssa) and Bryan Sánchez (Sonja); his grandchildren, Tiana, Mia, Gabriel, Aliyas, Juaquin, Isaiah, Thiago and Julian; his siblings, Cris Sánchez (Rose), Diana Pino (Johnny), Albert Sánchez, Liz Montoya, James Aguilar and Elaine Lopez (Anthony); and his godchildren, Shaun Sánchez, Peter John Turrietta, Erron Montoya and Aaron Fernandez.

Memorial scholarships in Gilbert's name have been established through the CNM Foundation and the Hospitality Industry Education Foundation of the New Mexico Restaurant Association.
