“Paul had a spirited heart. He had always spoke with confidence and conviction. He was a very passionate person in regards to many things he cared deeply about. I am saddened to hear of his passing. GA wont be the same without him. His love for anything Cajun is where he felt at home. The last crawfish I ever had were the ones I bought from him. “When I came upon Paul's restaurant in Duluth and met him, I was so excited. Being from Louisiana, I could never find a New Orleans/cajun restaurant worth going. But then I met Paul. I followed him when he moved and kept in touch when he transitioned to just catering and just selling crawfish. My heart hurts at the loss of such a wonderful and kind hearted man. “Paul was a dear friend from the beginning at the downtown Duluth restaurant to just simply ordering live crawfish for an annual family event. He always helped me with my seafood orders and his famous words were "I gave you a little extra!" I have followed him for years!! He had a great personality and always called me by name when he answered the phone. This man will be greatly missed in so many ways. He loved people and he loved his work! Such a WONDERFUL PERSON!!”

“First met Paul in 2006 in his Duluth restaurant. I was blessed from then on. Not only was he a great person but would bend backwards to find what you wanted from his fantastic La. menu. I followed him ever since, My 1st shock was when Paul left the restaurant business to catering. Now this horrible shock to hear this.. Paul was very special. Will miss you my friend. Prayers to Paul and his family. The folks in heaven will now get to taste great cajun food.”
