She was predeceased by: her parents, Alwin "Bill" Hoeft and Eleonore Hoeft (Hackbarth); and her brothers, Harold and Richard Hoeft. She is survived by: her children, Dean Simon (Joanne), Diane Simon, Dale Simon (Michelle) and Dan Simon (Becci); her sister Dorothy Zima; her grandchildren, Ian Simon (Lauren), Lena Simon (Kalle Kutschera), Dane Simon, Grace Simon, Audrey Simon, Sarah Shuman, Benjamin Shuman and Jonathan Shuman; her great grandchild Makari; her sisters-in-law, Pat Hoeft, Louise Zahn, Mardell Simon and Marion Simon; and her husband Edward Simon. She is also survived by many cousins, nieces, nephews and friends.
Elaine had survived three early battles with cancer, a bout with Lyme's disease and even a tussle with the alpha strain of Covid.
