She was loved and cherished by many people including: her father Edward; her children, Christine, Matthew (Brian Elbert) and Ronald J Elbert; her friend Judy Cortner; her grandchildren, Louis Beltran, Brian Elbert Jr., Casey Bailey, Jessica Bean, Ethan Hassler and Noah Elbert; and her great grandchildren, Colton, Averie, Easton Beltran, Keira, Gwendylan McClung, Parker Bailey, Hayden, Paityn, Cameron, Anistyn Bean, Sofia Hassler and Ilya.
Eunice donated her body to Saint Louis University Medical School. Donations can be made to DeGreeff Hospice House.
